Just in time for the 4th of July, this terrific recipe was developed by the folks at Kurbo*, a health and fitness app designed specifically for kids.
For the salad:
⅔ cup of uncooked red quinoa (or 2 cups cooked)
3 tablespoons of fresh mint, chopped
1 cup crumbled blue cheese
2 cups of fresh blueberries
For the dressing :
1 tablespoon of canola oil
4 tablespoons of blueberry vinegar
salt and pepper, to taste
1. Rinse quinoa and cook according to package directions. Drain and cool.
2. In the bottom of a large salad bowl, whisk dressing ingredients together.
3. Add quinoa to bowl with dressing and toss to coat.
4. Top with blue cheese, mint and blueberries and toss gently to combine.
